Each band is one physical product. Losses are shown against the quantity entering that band, and the two conversions between bands are shown separately — because a conversion is not a loss.

Drying: why the obvious number is wrong

Comparing weight in against weight out treats evaporated water as lost crop. Every quantity is recorded with its moisture reading, so loss is compared on dry matter.

Mass balance by batch

Inputs against outputs plus declared loss. A residual that is not water is stock nobody has accounted for.
